The vineyard uses two clones, the classic R3 giving very fragrant wines and the 297 which produces highly-structured wines. The grapes from the aromatic clone are macerated overnight at 6 °C while the others are immediately vinified without the skins. The musts are cold settled to obtain a very clean juice, blended and then fermented in stainless steel tanks at a controlled temperature (max 16 °C).

Fermentation lasts about 14 days, at the end of which the wine is decanted twice to separate the heavier lees, leaving it in contact with the lighter lees.

The winter cold helps stabilize and clarify the wine naturally, giving a Sauvignon which is lightly clarified and filtered, then bottled. Straw yellow with greenish hues, the bouquet is aromatic with hints of fruit such as white-fleshed peaches and wild flowers.

The taste recalls all the sensations on the nose.
