DESCRIPTION: Amber-coloured top-fermented beer with ruby bottle conditioned.
APPEARANCE: beige, compact, fine and persistent head; dark amber colour with ruby glints, sometimes there is a yeast cloud; fine perlage.
BOUQUET: cured and caramelised, with herbaceous hints and a slight acidity due to the burnt caramel malt.
FLAVOUR: the caramel malts offset the slight acidity imparted by the roasted malt and the bitterness of the hop (Admiral variety). Full-bodied beer.
TYPE OF BEER: Scottish red
ALCOHOL CONTENT: 6.3 %
EXCELLENT WITH: game such as pigeon, hare, venison, wild boar.
SERVING TEMPERATURE: 10-12 °C
